Most soups in the slow cooker can cook for a very long time without risking being over cooked. The only exception is when starches like rice, potatoes, pasta, barley or other grains are added as these items can indeed be overcooked in a soup and turn mushy. If you need to let a soup cook for an extended period of time it is best to add these items near the end of the cooking time.
Most slow cooker recipes give you the option to cook on either the LOW or HIGH heat setting. If only one of those options is listed, follow the instructions of the recipe. However if there are two options given for either LOW or HIGH we think the results are almost always better when cooked on LOW for a longer period of time. This “low and slow” cooking method allows flavors to really develop and meat gets more tender.
