What a fun recipe to put together, especially if you are wanting to try out quinoa or sneak it into your meal without the kiddo’s realizing they were eating a “superfood”. As with our other freezer meals the hamburger (or ground turkey) should be cooked first, This is more heating things up, softening the beans and onions and cooking the quinoa. Since I put this together with 9 other meals I did a huge batch of 5 pounds of hamburger at once in the Crock-Pot. It’s now my favorite way of making hamburger, and then I just divided up the hamburger (after draining the grease and patting it dry) into the various recipes.
Feel free to make this as “hot” as you are liking with the taco mix. I prefer low salt versions, so that is what I generally prepare my meals with. Although I used a McCormick taco mix for this, you can use your own taco seasonings as well. What you prepare for about 2 pounds of meat should be more then enough.
