Ingredients
  • 4 whole Boneless Skinless Chicken Breasts
  • 1 cup Chicken Broth
  • 14.5 ounces Canned Corn
  • 14.5 ounces Canned Black Beans
  • 14.5 ounces Canned Diced Tomatoes
  • 1 clove Garlic minced
  • 1 teaspoon Freshly Ground Black Pepper
  • 1 teaspoon Brown Sugar light or dark
  • 16 ounces Fresh Baby Spinach
  • 4 ounces Cream Cheese
  • 1 cup Salsa for topping
  • 2 cups Mexican Cheese finely shredded, for topping

Prep Time 30minutes
Cook Time 5 - 6hours on LOW
Instructions
  1. Rinse chicken breasts and put into crock pot, season with the garlic, black pepper and brown sugar.
  2. Pour chicken broth over chicken
  3. Drain corn and beans and mix with the can of tomatoes and pour over chicken.
  4. Pour bag of spinach over remaining ingredients.
  5. Cook on low heat for 5-6 hours. Put the cream cheese into crock pot 1 hour before serving.
  6. Top with salsa and cheese. May serve over pasta or rice.
