Today while running errands I noticed the roadside stand that comes every summer and sets up in the dirt lot next to Burger King that sells fresh juicy peaches from Colorado. You see, we don’t exactly have the weather for growing reliable crops of peaches here in Wyoming. Fresh peaches from our neighboring “other rectangular” state is as good as it is going to get.
The kind folks that drive their delicious peaches all the way up to Northeastern Wyoming sell their peaches by the pound at a fair price and if I just want a few for a snack that is the way I purchase them. But at least once a summer I buy a case of peaches and spend the better part of a day or two putting them up. I may make some Peach Vanilla Butter in my slow cooker (my personal favorite way to have the taste of summer during the cold Wyoming winters) or I may make a cobbler. I always slice and freeze some for putting in my morning smoothies.
