Slow Cooker Broccoli Cheese Casserole
Frozen broccoli is transformed into a delicious cheesy casserole side dish that everyone in the family is going to love. As a mom I love how easy this recipe is to put together. Seriously, in less than 5 minutes I can have everything ready to go, 10 minutes if I decided to shred my own cheese by hand. But to be honest, to save time I usually just use the pre-shredded cheddar cheese.
And speaking of cheese, I can almost always get my kids to eat their veggies when it is covered in a yummy cheese sauce. My husband likes it too and of course, so do I!
Serve this cheesy broccoli casserole as a side dish with your favorite entree. It goes well with pork, chicken or beef! And if you have any leftovers, warm it back up the next day and spoon over a baked potato for lunch!

CREAM OF ANYTHING SOUP MIX:
– 1 Cup Non-Fat Powdered Milk
– 3/4 Cup Cornstarch

– 4 Tablespoons Dried Minced Onion

Yes you may use replace the frozen broccoli in this recipe for fresh broccoli. The cooking time will be about the same (2 1/2 to 3 1/2 hours on HIGH). Depending on your individual slow cooker the broccoli may be done at the 2 1/2 hour mark or closer to the 3 1/2 hour mark.
This recipe can easily be doubled. You may need to cook it just a little bit longer. We suggest cooking the recipe per the instructions and then check your casserole and see if needs a little bit more cooking time. Usually with vegetable based dishes like this they don’t need a whole lot of extra cooking time (but they may depending on your slow cooker).

Crock-Pot Broccoli Cheese Casserole Recipe
Ingredients
- 20 Ounces Frozen Broccoli Florets
- 10.5 Ounces Canned Cream Of Celery Soup
- ½ Cup Chopped Green Onions
- 2 Cups Shredded Cheddar Cheese
Instructions
- Add broccoli, cream of celery soup and green onions to a 4 to 6 quart slow cooker.
- Cover and cook on HIGH for 2 1/2 to 3 1/2 hours.
- Add the shredded cheddar cheese and stir to mix the cheese into the broccoli.
- Recover and cook for an additional 30 minutes or until the cheese is melted.

How would adding the chicken to it affect cook time?
Hi Jody, while this recipe has not been tested using chicken in the recipe I would think it should work. If you want to use cooked chicken that has either been shredded or diced there should be no need to adjust the cooking time. However, if you are starting with raw chicken I would suggest cutting the chicken into bite sized pieces and the recipe may need to cook a little extra time to allow the chicken to fully cook. I would suggest starting at the 3 1/2 hour cooking time and then adding additional time if the chicken is not fully cooked. Again, this is just a suggestion based on my best guess and I have not tested this. So, if you give it a try please come back and let us all know how it turned out for you!

If I double this recipe, do I have to increase cooking time? I’m also thinking of making this with cream of mushroom soup because I don’t eat meat. Do you think it will still work ?
Hi Philomena, this recipe has not been tested doubled, so I cannot give exact cooking times. But generally when you try doubling a slow cooker recipe there will be additional cooking time involved just not double the cooking time. I usually check the dish at the recommended cooking time to see where it is and if it needs more cooking add an hour, check, and repeat as needed. With a rice dish like this I don’t think it will be a whole lot longer than the listed cooking time.
And I think using cream of mushroom soup would work just fine in this recipe. If you give it a try come back and let us know how it turned out for you!

Yes! Fresh broccoli will work just as well as frozen.

How would I incorporate long grain rice to this dish?
Hi Jacquelyn, we have not tested this recipe using long grain rice. Because rice is a tricky ingredient in slow cookers I would suggest cooking the rice on the stove-top or in a rice cooker and adding the cooked rice after the Broccoli Cheese Casserole is cooked.
I am sure there is a way to cook the rice with the other ingredients in the slow cooker but without proper testing I am unsure how to advice.
Is there a different soup I can use, my family doesn’t like celery?
You can use any sort of “cream of” type soup in this recipe. Cream of chicken or cream of broccoli would work great in this recipe I think.
