My kids love going to Chili’s Restaurant and eating the chips and dip. Recently, I started to order the queso also. I now have them hooked on the queso!. We moved a year or so ago and do not go to Chili’s as often now. My sister gave me this recipe to make the Queso copycat style and I had to try it in the crock-pot. Huge hit with the family…and way cheaper than eating out.
1 16oz Velveeta, cubed
1 15oz Can Chili (no beans)
1 Cup Milk
1 Tablespoon Lime Juice
2 Teaspoons Paprika
1/2 Teaspoon Cumin
1/2 Teaspoon Cayenne Pepper
2-4 Teaspoons Chili Powder
- In a small bowl, combine and mix all powder spices. Set aside.
- Add velveeta cubes, chili (any brand without beans is fine), milk and lime juice to crock-pot.
- Add in mixed spices. (add in chili powder based on how spicy you want it. You can always add more prior to serving)
- Cook on low for 2 hours stirring around 1 hour.
- Serve with chips.
