Crock-Pot Copycat Chili’s Queso
My kids love going to Chili’s Restaurant and eating the chips and dip. Recently, I started to order the queso also.
I now have them hooked on the queso!
We moved a year or so ago and do not go to Chili’s as often now, so my sister gave me this recipe to make the queso copycat style and I had to try it in the slow cooker.
This recipe is now a huge hit with with the family…and way cheaper than eating out.
Equipment Needed For Crock-Pot Copycat Chili’s Queso Recipe:
- 4 Quart, 4.5 Quart Or 5 Quart Slow Cooker
- Knife
- Cutting Board
- Can Opener
- Liquid Measuring Cup
- Citrus Juicer

- 16 Ounces American Cheese Such As Velveeta Brand, Cubed
- 15 Ounces Canned Chili With No Beans Or Homemade (See note below)
- 1 Cup Milk
- 1 Tablespoon Lime Juice
- 2 Teaspoon Ground Paprika
- 1/2 Teaspoon Ground Cumin
- 1/2 Teaspoon Ground Cayenne Pepper
- 2 Teaspoons Ground Chili Powder (See note below)

- Add all ingredients to a 4 to 5 quart slow cooker.
- Cover and cook on LOW for 1 hour.
- Stir the dip to ensure the cheese is melting evenly.
- Recover and cook for 1 additional hour.
- Turn slow cooker to the WARM setting to keep your dip warm while serving.
- Set out your favorite brand of tortilla chips and enjoy!
*If you are on a Gluten Free diet look for a brand of no bean chili that does not contain any gluten.
** If you would like to add more spice to this dip, feel free to increase the amount of ground chili powder you add.
