Ingredients

  • 1 Pound Boneless Skinless Chicken Breasts (Cut into bite sized pieces)
  • 10.5 Ounces Canned Cream Of Chicken Soup
  • 1 cup Low-Sodium Chicken Broth
  • 1 cup Heavy Whipping Cream
  • 1 Medium Yellow Onion (Diced)
  • 2 Cloves Garlic (Minced)
  • 1 Teaspoon Italian Seasoning
  • Kosher Salt (To taste)
  • Freshly Ground Black Pepper (To taste)
  • 8 Ounces Spaghetti Noodles (Cooked)

Instructions

  • Place the cut 1 Pound Boneless Skinless Chicken Breasts in the bottom of a 5 quart or larger slow cooker.
  • In a separate bowl, mix together the 10.5 Ounces Canned Cream Of Chicken Soup, 1 cup Low-Sodium Chicken Broth, 1 cup Heavy Whipping Cream, 1 Medium Yellow Onion, 2 Cloves Garlic, 1 Teaspoon Italian Seasoning, Kosher Salt, and Freshly Ground Black Pepper.
  • Pour the mixture over the chicken in the crock-pot
  • Cover and cook on LOW for 4 to 6 hours, or until the chicken is cooked through and tender.
  • Add the cooked 8 Ounces Spaghetti Noodles to the crock-pot and stir until everything is well combined.
  • Recover and cook for an additional 30 minutes on low, allowing the noodles to soak up the sauce.

    I made this last night and it was delicious! Even my picky eater liked it. I made a few changes which may cause the purists to excoriate me, but they were mainly by necessity. I had a big chunk of rotisserie chicken breast that I wanted to use. Not being raw chicken I did not need to cook for a long time in a crock pot. I was out of garlic so used a large shallot. I sautéed the chopped onion, then after a while added the shallot. Then I added the rest of the ingredients. I used Herbs du Provence instead of Italian seasoning. I simmered the mixture for about 30 minutes and then added the chicken and the noodles and did a low simmer for about 15 minutes more. The meal was a big success. I had some left over which I had for breakfast. There is still a bit more bereft of the noodles which I plan to put on a waffle tomorrow morning. Thanks for pointing me in the right direction for such an EZ and tasty dinner.
