Slow Cooker Hot Chicken Sandwiches
I love to make up these warm and cheesy hot chicken sandwiches because I really hate to waste leftovers. So, whenever I have some leftover cooked chicken (or I spot a great deal on chicken) I whip up these easy to make sandwiches. The filling has just 5 ingredients and only takes 2 to 3 hours to cook in the slow cooker.
If you don’t have leftover cooked chicken, you can either cook up some chicken the day before like in this recipe for Crock-Pot Roasted Herbed Chicken. Or grab a rotisserie chicken from your local grocery store deli.
These sandwiches are perfect for a Saturday or Sunday lunch. And the filling is easy to re-heat if you want to make sandwiches throughout the week.

How Many Cooked Chicken Breasts Will Make 8 Cups Of Diced Chicken?
The quantity of diced chicken will vary depending on the size of your chicken breasts. But I would say 3 large breasts or about 5 medium breasts should be enough.
Can I Use Other Cuts Of Cooked Chicken?
You can indeed use any cut of cooked chicken. From chicken breasts, chicken thighs, chicken legs or a whole cooked chicken.
Can I Use Pre-Shredded Cheddar Cheese?
While I prefer to shred or grate my own cheese whenever possible (I find it just has a better flavor and texture), to save time you can use the bagged pre-shredded cheddar cheese found in most grocery stores.

- 8 Cups Diced Cooked Chicken
- 1 Medium Yellow Onion Peeled And Diced
- 2 Cups Mayonnaise
- 1 Cup Shredded Cheddar Cheese
- 1/2 Cup Finely Diced Celery

- Add all ingredients to a 5 quart or larger slow cooker. Stir to combine.
- Cover and cook on LOW heat for 2 to 3 hours or until the onion and celery are cooked yet still have a good texture.
- Serve on buns or rolls for dinner or lunch.

Sounds good. But for we less experienced cooks, giving us the approximate number of chicken breasts would be much easier than trying to figure out how many would be needed for 8 cups.
That is something I had not thought of before. I would think 4 Decent sized chicken breasts would be about right.

I made these using a rotisserie chicken for a potluck before COVID and there was nothing left. The recipe only fed 10 people with standard size buns. They are delicious!
