Slow Cooker Meatball Sandwiches
My family loves meatball sandwiches for dinner. In fact it is on our list of favorite recipes from which I select from when doing my meal planning.
And while it is easy enough to buy a bag of frozen meatballs and dump a jar of store-bought marinara sauce over them and all it a day. This recipe is homemade, from scratch and totally worth the effort!

Crock-Pot Meatball Sandwiches Recipe
Ingredients
For The Sauce
- 3 cloves Garlic (minced)
- ¼ cup Celery (finely diced)
- 1 whole Yellow Onion (finely diced)
- 6 ounces Canned Tomato Paste
- 14 ounces Canned Pureed Tomatoes
- 2 teaspoons Salt
- 1 teaspoon Dried Oregano
For The Meatballs
- 2 pounds Extra Lean Ground Beef
- 1 ½ Cups Italian Cheese (shredded)
- 1 teaspoon Freshly Ground Black Pepper
- 1 ½ teaspoon Salt
- 4 large Eggs
- ¼ cup Fresh Parsley
- 1 cup Seasoned Italian Breadcrumbs
For Serving
- 1 cup Mozzarella Cheese
- 8 whole Hoagie Buns Or Rolls
Instructions
- I could not find pureed tomatoes so I ended up buying a can of chopped and putting them in a blender and pureeing them.
- Put in a bowl: Garlic, Tomatoes, paste, salt, oregano, onion and celery.
- Mix well.
- In another bowl mix ground beef, Italian cheese, parsley, pepper, eggs, bread crumbs and salt well until moist throughout.
- Spray a thin layer of Pam on 6 quart or larger slow cooker or liner (if using).
- Put a thin layer of sauce on bottom of crock pot.
- Carefully roll meatballs into balls and place on layer.
- then pour another layer onto balls.
- Lay another layer down of sauce.
- Carefully roll meatballs into balls and place on layer.
- repeat until you have used up all of meat.
- Pour remaining sauce on top, making sure all of meat is covered.
- Cook on low for 8 hours, or high for 5.
- These are a soft meatball, so you will need to carefully pull them back out when you eat them.
- If you so choose, when you put them in the hoagie, cover with some mozzarella.
