Slow Cooker Italian Chicken with Potatoes
I have previously just dumped chicken in with Italian salad dressing and it tasted quite good but it was super messy and not really a well planned out meal, just goopy. I wanted to make it into something that could be used as the whole meal and wouldn’t feel like I’ve just made a bunch of mushy chicken.
Putting this together puts a few great ingredients together and they really work out well. My family just raved about it multiple times. I’m not sure if it’s the Italian dressing or the Parmesan cheese that makes it so good, but it just really was delicious.
Like previously we ate this with some Jasmine rice, and used some of the juices to add to the rice while eating. This time around I added some asparagus that I just cooked up in a steamer bag in the microwave because my children including the picky youngest one, have decided that asparagus is their favorite vegetable and so I just cannot pass up a chance on having them eat it.
This is a pretty open recipe so feel free to change up the potatoes to what you prefer, you could also add onions, use sweet potatoes or even carrots. Any rice or pasta will also work, we just really like Jasmine rice.

Crock-Pot Italian Chicken with Potatoes Recipe
Ingredients
- 8 whole Boneless Skinless Chicken Breasts (about 4 ounces each)
- 16 ounces Italian Salad Dressing
- 8 ounces Parmesan Cheese (shredded)
- 1 teaspoon Italian Seasoning
- 4 – 6 whole Potatoes (scrubbed and cut in half or wedges, you can peel them if desired)
Instructions
- Line a 6 quart or larger slow cooker with a Crock-Pot Liner OR spray with non-stick cooking spray if desired.
- Squirt a small amount of Italian dressing in bottom of crock-pot.
- Place 2 to 4 chicken breasts in crock. I placed them in a row across.
- Pour some of the Italian dressing on the chicken.
- Sprinkle about a third of cheese onto the chicken.
- Sprinkle Italian seasoning onto the chicken.
- Place next two chicken breasts into crock-pot, if possible not directly on top of the first breasts. I did them above and below the ones below.
- Pour more Italian dressing on the two chickens.
- Sprinkle a third of the cheese on top of the chicken.
- Sprinkle Italian seasoning onto the chicken.
- Place potatoes on top.
- Pour the remaining Italian dressing on the potatoes and then cover with the rest of the Parmesan cheese.
- Sprinkle Italian seasoning on the potatoes.
- Cover and cook on LOW for 6 to 8 hours.

These looks so easy and I’m sure it is delicious. I make my own Italian seasoning using Oregano, Basil, Rosemary, Garlic, Salt and Pepper. I can’t wait to try it with this chicken.

Can I speed up this recipe by putting on high for 4 hrs. And 1 hr on low. I just seen this recipe and wanted to make for dinner tonight it’s 130pm now want dinner at 630pm

If all I have are sweet potatoes could I use them? Or do you think that combo wouldn’t taste good?

What measurement is the Italian seasoning? Recipe doesn’t say.
Hi Mary, I am sorry we missed putting in the measurement of the Italian seasoning. I have edited the recipe as it should have read 1 teaspoon. You can of course use more or less to suit your needs.
