Crock-Pot Sweet Acorn Squash

Acorn squash is a fall and winter favorite because it is in season and tastes great. I like to keep it simple with this recipe which is just acorn squash, and a little bit of butter and brown sugar. My family eats it as a side dish with just about any meal and I have even been known to eat an entire acorn squash half for lunch.

The flesh of the acorn squash comes out nice and tender in the slow cooker and the little bit of butter and brown sugar brings out the natural flavors in this beautiful vegetable.

Another bonus is that this recipe is healthy too! With acorn squashes packing in a ton of fiber and a healthy dose of vitamins C, A, B-6, niacin, folate, and thiamine! And at just 4 Weight Watchers SmartPoints per serving it is diet friendly too!

My husband likes to add a little bit of salt before eating as this gives a nice balance of sweet and salty while my kids prefer a sprinkle of cinnamon on theirs. And yes, my kids LOVE acorn squash!

  • 1 medium Acorn Squash ,cut in half, seeds and pulp removed
  • 2 tablespoons Butter
  • 2 tablespoons Brown Sugar

Instructions
  1. Prepare your acorn squashes by cutting each one in half and scooping out the seeds and pulp.
  2. Place acorn squash halves skin-side down in a 4 quart or larger slow cooker.
  3. With a sharp kitchen knife, score the flesh of the inside of the squash all over, being careful not to pierce the skin. This step will allow the butter and brown sugar to penetrate the flesh of the squash.
  4. Evenly divide the butter and brown sugar between the two squash halves.
  5. Cover and cook on HIGH for 3 hours or until the flesh of the squash is nice and tender.
  6. Serve as is, or if desired, sprinkle with a pinch of salt or cinnamon.

    Can you layer more than one squash in the pot? I have a round crock pot and I’d like to cook 2 whole squash at the same time. What do you think?

    If you’re lucky to find Delicata squash, save the seeds and toast them. They are sweet and delish, akin to popcorn. Delicatas are hard to find in Florida and they are seasonal but if you find them, buy many, cook and freeze.
