Slow Cooker Reuben Casserole
One day while flipping through one of those fancy magazines my local grocery store puts out I spotted the idea of a reuben casserole. Because I was checking out and it was my turn at the register I quickly put the magazine back on the rack and filed away the idea of a new casserole in the back of my mind.
I love a good Rueben sandwich with all of it;s corned beef, sauerkraut and Swiss cheese!
When it came time to make the casserole, I didn’t have a recipe to use for reference so I sort of winged it based what I could recall from the magazine. Of course I decided that this casserole would have to be made in my slow cooker.
So, I pulled out my 3.5 quart casserole Crock-Pot (this recipe can also be cooked in a 6 quart or larger slow cooker). And MAN did it come out TASTY!

- 1 Tablespoon Butter
- 1 Medium Yellow Onion Diced
- 1 Medium Green Bell Pepper Diced
- 1 Tablespoon Vegetable Oil
- 20 Ounces Refrigerated Shredded Hashbrown Potatoes
- 8 Ounces Canned Sauerkraut Rinsed And Drained
- 1 Pound Corned Beef Diced
- 20 Ounces Jarred Alfredo Sauce Or Homemade Alfredo Sauce
- 6 Ounces Shredded Swiss Cheese

- In a large skillet on the stove-top, sautee the onions and bell pepper in the butter until the vegetable are softened and the onions are translucent. Add cooked vegetables to a 3.5 quart casserole slow cooker or a 6 quart or larger slow cooker.
- In the same skillet add the tablespoon of vegetable oil to the pan and add the refrigerated hash brown potatoes to the pan and cook them until they are slightly browned. Add the browned hash browns to the slow cooker.
- Add sauerkraut, corned beef, Alfredo sauce and Swiss cheese to the slow cooker and stir well to combine.
- Cover and cook on LOW for 2 to 3 hours or until the potatoes are fully cooked and the casserole is slightly bubbling around the edges.

Im cooking it now and the pre-taste test is already yummy! It smells awesome! I was wondering if know if anyone knows if it freezes well. There’s ALOT for just the 2 of us….not complaining about that though! 😁
