This recipe for Crock-Pot Scalloped Chicken is an easy dish to put together, only needing 3 ingredients! One box of scalloped potatoes, chicken & water… voila, you have dinner made!

Slow Cooker Scalloped Potatoes and Chicken
If you are anything like me, some days are just plumb crazy running the kids around to sports, events, appointments and everywhere else they need to go. Some days you just need something EASY to throw together for dinner.
This recipe for scalloped potatoes and chicken made in the slow cooker has to be one of the easiest recipes I have ever put together. And my family really liked it.
Start by putting 4 boneless skinless chicken breasts in the bottom of your slow cooker (a 6 quart or larger works well here…you could probably throw this in a 5 quart slow cooker and it will be just fine too).
Then I added the potatoes from a box of Betty Crocker Scalloped Potatoes over the top of the chicken.
Open up the seasoning packet that came in the box of scalloped potatoes and mix it with 2 cups of water and pour that all over the potatoes and chicken in the slow cooker.
Put the lid on your crockpot and cook for 8 hours on LOW or 4 hours on HIGH.
And that is it. Could a recipe get any easier I ask you?
This recipe is also very versatile. You could add some veggies (broccoli or cauliflower would be great), add some shredded cheese, sprinkle in some additional herbs and seasonings. Go wild.
Or keep it simple…because some days I just need simple.

Frequently Asked Questions
While we have not tested this recipe using thighs instead of chicken breasts it should work great. You may need to adjust the cooking time just a little bit for thighs. But the end result will still be delicious!
Yes, you can use frozen chicken in this recipe. You will more than likely (depending on how your particular slow cooker cooks) need to cook the chicken a little longer. Usually about 1 hour longer when using frozen chicken.
The chicken in this recipe is raw (or uncooked). We do not suggest using cooked chicken in this recipe as the chicken will be over-cooked or the potatoes under-cooked.

Crock-Pot Scalloped Potatoes and Chicken Recipe
Ingredients
- 4.9 Ounces Packaged Scalloped Potatoes (I Used Betty Crocker Brand)
- 1 Pound Boneless Skinless Chicken Breasts
- 2 Cups Water
Instructions
- Place the chicken in the bottom of a 6 quart or larger slow cooker.
- Open the box of scalloped potatoes and cover the chicken with the potatoes from the box.
- In a bowl mix the seasoning packet with the 2 cups of water and stir with a fork well.
- Pour the seasoning packet with water over the potatoes and chicken.
- Cover and cook for 8 hour on LOW or for 4 hours on HIGH.

Is the chicken cooked or uncooked when it is put in the crockpot?

The chicken is uncooked.
Does the chicken have to be cooked before going into the crockpot or can it be frozen?
The chicken in this recipe goes in raw (uncooked). While this recipe has not been tested using frozen chicken breasts it should be just fine. You will just need to allow some extra time (about an hour or so) to allow for the frozen chicken to thaw and then cook in the slow cooker.
Not a fan of chicken breasts. Can I use legs instead?

Hi Tiffany, a serving size of this recipe is 1/4 of the recipe as it serves 4 people as written. So, 1 chicken breast (the average size of a chicken breast is 4 ounces) and 1/4 of the potatoes.
Where I’m from 1lb chicken breasts is about 2 and a half chicken breasts. Can I use four if it is more weight?
Hi Donald, For nutritional purposes we use a 4 ounce chicken breast as guideline for a serving size. However you should be able to use four bigger sized breasts in this recipe without too much adjustment in the cooking time.
With Thanksgiving quickly approaching, I’m trying to de-clutter my cupboard and freezer by using only items that I have on hand. This recipe was a great way to clear some space and provide a carefree dinner at the same time. As a bonus, I tossed in a bag of frozen carrots & broccoli, some grated Parmesan cheese and a little basil. In a few hours, I had a hearty dinner. Thank you for the tasty inspiration !!

We tried this recipe and it was not very good. The chicken came out very dry and the potatoes became overcooked. Some more seasoning would maybe have saved it. Not sure.

Going to be making this in a few days. It doesn’t seem like a lot of food for a 6-quart crock. Can this recipe be doubled? Also, I was thinking of using chicken broth instead of water. Any thoughts?
While we have not doubled this recipe I don’t see why that would be a problem. Also I think using chicken broth will work just fine.
