Crock-Pot Stuffed Zucchini
1 Zucchini, halved lengthwise and seeds removed
1 Cup of Pasta Sauce
1/2 Lb Sausage, cooked and drained
3/4 Cup Shredded Mozzarella Cheese
- Half the zucchini lengthwise .
- Remove the seeds and middle portion with a spoon.
- Layer the “boat” with pasta sauce and sausage.
- Cook on low for 5 hours.
- Add cheese to the top of the zucchini and cook an additional 30 minutes on low.
Lots of zucchini coming from my garden. I am trying to think of ways to cook it that might appeal to the entire family. I made pizza boats out of one large zucchini and they were really good! You could add additional pizza ingredients like mushrooms or pepperoni or make it a vegetarian pizza all together!
