Slow Cooker Coconut Pecan Sweet Potatoes
This year my neighbor was nice enough to put a garden in for me. My house does not have any extra area for growing produce and he was nice enough to do this as long as I grew some green beans and pumpkins. Small price to pay for fresh tomatoes and okra!
The are he put the garden in had nice black dirt. Most of the soil around here consists of nothing but clay so growing potatoes or sweet potatoes is very hard. Luckily for me this was not the case in my garden.
So here it is fall, and I have fresh grown potatoes and sweet potatoes in abundance. Now to use all these potatoes.
One of my favorite recipes for thanksgiving is those yummy sweet potatoes covered with the nuts and brown sugar and marshmallows. You know that one where you want to eat the whole casserole and then you remember that the mashed potatoes are calling your name too and wants to bring that friend yummy gravy too.
This recipe is sort of like that and just as tasty but in the crock-pot. The hardest part was slicing the sweet potatoes. A trick to this is once you peel the potatoes, heat them in the microwave for a minute or two. This will cook them a little but make them easier to cut. Having had a few surgeries on my arms, some days it is hard to cut potatoes. This little trick saves me a few Tylenol and a bag of ice later.
Once the potatoes are cooked, you can serve from the slow cooker on the WARM setting or transfer to a pretty dish Great flavor and my kids loved them.

Crock-Pot Coconut Pecan Sweet Potatoes Recipe
Ingredients
- 4 Pounds Sweet Potatoes
- ½ Cup Chopped Pecans
- ½ Cup Unsweetened Flaked Coconut
- ½ Cup Butter (Melted)
- â…“ Cup Granulated Sugar
- â…“ Cup Brown Sugar (Packed)
- ½ Teaspoon Pure Vanilla Extract
- ¼ Teaspoon Kosher Salt
Instructions
- Peel and dice sweet potatoes and add to a 5 quart or larger slow cooker.
- In a bowl mix together the pecans, coconut, melted butter, both sugars, vanilla extract and salt.
- Add pecan mixture to the slow cooker and toss with the sweet potatoes.
- Cover and cook on LOW for 4 to 5 hours.
