This summer, I worked part time at our local YMCA as a counselor for day camp.   I had a great boss (little plug for when she sees this!).  Friday’s was “cook out” days and when the weather was not that great, Ramona brought in something for the kids for lunch in her crock-pot.  One day she brought in nachos for the kids and made this Crock-Pot Easy Taco Dip Recipe for them.  Well 15 kids raved about it and ate it quicker than we could serve it.

We used little bowls and layered in nacho chips and taco dip and then they had a choice of chopped tomatoes, shredded cheese, shredded lettuce and sour cream.  Trying to keep it kid friendly but you could easily add in chopped pepperoni and black olives to serve to an older crowd.

My youngest has a birthday party coming up and she asked for this as her choice of dinner that day.  Super easy and a cheap option for a birthday party and you can add in side fixings to please just any crowd.

Crock-Pot Easy Taco Dip Recipe

This quick and easy recipe is a hit with any large group (kids especially).

Ingredients

2 Lbs. Velveeta Processed Cheese, cubed
2 (13 oz.) Cans Chili
2 Lbs, Ground Beef
1 Small Onion, chopped
1-2 Packages Taco Seasoning
2 Tablespoons Chili Powder
Tabasco Sauce to taste

Instructions

  1. On stove, brown ground beef and onions and drain to remove excess grease.
  2. Add cooked ground beef and remaining ingredients to crock-pot.
  3. Cook on Low for 2 hours or until Velveeta is melted.
  4. Serve over your favorite tortilla chips.
