Crock-Pot Gingerbread Oatmeal

Today, as I write this the temperature is -17 degrees (NEGATIVE 17!!!) here in Wyoming. And I gotta tell you when it gets that cold you crave need something hot and hearty for breakfast. It just warms you up from the inside out. I love cooking steel cut oatmeal in my crock-pot because it makes the whole process just easy as can be. You just toss everything in the slow cooker and wake up to a warm breakfast ready to serve.

This recipe for Crock-Pot Gingerbread Oatmeal just hits the spot on a cold morning with all the yummy flavors of your favorite gingerbread cookie. Warm spices, ginger, cinnamon, cloves, nutmeg. A bit of brown sugar and molasses round out the flavors and adds just the right amount of sweetness. You could toss in some raisins or candied ginger if you want to. I was going to put some candied ginger in this one but when I went to the cupboard to grab some I realized I was all out, and frankly it is just too cold to go to the store today.

I am thinking this would make for a lovely breakfast on Christmas morning, and I may just do this recipe again on Christmas day this year!

  • 1 cup Steel Cut Oatmeal
  • 4 cups Water
  • 1/4 cup Unsulphured Molasses
  • 1/2 cup Brown Sugar

Instructions
  1. Spray a 5 quart or larger slow cooker insert with non-stick cooking spray or line with a slow cooker liner.
  2. Add all ingredients to the slow-cooker and stir to combine well (spices will float on the top, this is normal).
  3. Cover and cook on LOW for 4 to 5 hours. Stir once more before serving.
  4. Enjoy!

    What is steel cut oatmeal? I’ve never heard of it.

      It is a type of oatmeal that most stores sell. It is different then your quick oats.

    I don’t want to get up at 3 a.m. to fix or even just turn on the crockpot for an 8 a.m. breakfast so can it be on low overnight or will that ruin it?

      Hi Sue, it will probably over cook if you cook it for 8 hours on low overnight. A programmable crock-pot is ideal for this recipe. If you don’t have a programmable one you can set up yourself with a timer (sold for turning on and off your lights while you are on vacation).

    I’ve done overnight steel cut oats in the crockpot and have found they turn out best (if you’re cooking them for more than 6 hours) if I turn the crockpot onto “keep warm setting” rather than the “low”. The oats are cooked, warm and not burned or overly dry with that route, cooking for 7-8 hours.

    about how many servings and what is the serving size–I am on WW ad love steel cut oatmeal (more filling then rolled) and I need to convert recipe to smartpoints–sounds fantastic and yummy

    I plan to to make this for Christmas morning. Would it be ok if it in the crock pot for more then 5 or 6 hours?

      If it is set on the WARM setting it is fine for a little while longer.
