My husband surprised me late at night that we were having guests the next day for lunch.   Luckily, they were bringing lunch but I needed a quick dessert.  I had a tupperware container full of crushed pineapple that was given to me the day before.  I also had a yellow cake mix.   I was able to find a recipe for a Pineapple and Cherry Dump Cake, but I did not have a can of cherry pie filling.   So I “winged” it and hoped for the best.   It was a hit.  The pineapple flavor mixed well with cake mix and did not overpower it.

Crock-Pot Pineapple Dump Cake

Ingredients

1-2 Cups Crushed Pineapple (about one can)
1 Tablespoon Sugar
1 Yellow Cake Mix
2 Sticks Butter, Melted

Instructions

  1. Add pineapple to the bottom of the crock-pot.
  2. Sprinkle the sugar on top of the pineapple.
  3. Next sprinkle the dry cake mix on top of the pineapple evenly.
  4. Poor the melted butter on top of the cake mix.
  5. Cook on high for 2 hours.
  6. Serve.
