My husband surprised me late at night that we were having guests the next day for lunch.

Luckily, the guest were bringing lunch but I needed a quick dessert.  I had a plastic container full of crushed pineapple that was given to me the day before.  I checked my pantry and found a box of yellow cake mix.

I rifled through my collection of cookbooks and found a recipe for pineapple and cherry dump cake, but alas, I did not have a can of cherry pie filling.

So what’s a girl to do? I winged it and hoped for the best.

And you know what? It was a huge hit with our guests.

The pineapple flavor mixed well with the cake mix and did not overpower it.

All in all a success for a dessert that I put together on the fly and didn’t have to drive to the grocery store for.

A winner in my book!

Ingredients

  • 14 Ounces Canned Crushed Pineapple (Undrained)
  • 1 Tablespoon Granulated Sugar
  • 1 Box Yellow Cake Mix ((See Note))
  • 1 Cup Butter (Melted)

Instructions

  • Add pineapple to the bottom of of a 5 quart or larger slow cooker.
  • Sprinkle the sugar on top of the pineapple.
  • Next sprinkle the dry cake mix on top of the pineapple evenly.
  • Pour the melted butter on top of the cake mix.
  • Place a thin clean kitchen towel OR a double layer of paper towels between the lid and the slow cooker insert.
  • Cook on HIGH for 2 to 3 hours.

Notes

In this recipe I used a 15.25 ounce box of Betty Crocker brand yellow cake mix. Any brand will work however as long as it is designed to make a 13 x 9 inch cake.

      Cut the butter in HALF! A full cup is waaaay too much. Doesn’t bake in two hours. So far mine has been baking for 2 1/2 hours and it’s still butter SOUP!

    Can you use pineapple rings cut up for this recipe ? Do you use juice also ? Thanks

      This recipe calls for canned crushed pineapple. We have not tested it with cut up pineapple rings. If you try it out let us know how it turns out.

    I made it for my neighbors Birthday! It was good. Quite rich. I had a 20 oz can of cut pineapple. I tossed that in blender and crushed. (Took out 6oz I’m saving to top ice cream!). We both enjoyed it and I had all ingredients here.

    I made this using fresh pineapple that was already cut up in chunks., but I cut those in half. I had a BOGO free for the pineapple so that came in handy. I took to heart what someone said about too much butter so I used one stick melted. It was perfect. I also added about two spoons of brown sugar and chopped walnuts. Both sprinkled over the pineappke. This was an amazing dessert! I topped it with real whipped cream. Yum.

    I made this with pineapple tidbits. I added shredded coconut and used 1 tbs. brown sugar. It was delicious.took about 2 hrs. will make this again.
