Crock-Pot Minestrone Soup

Crock-Pot Minestrone SoupOkay I whipped this Minestrone up.  I had a few idea’s of what I was planning on putting in it..and what I had in my cupboards made me change my mind a bit.  Isn’t that how it always ends up being?  Don’t make the mistake I did…Don’t put the Garbanzo Beans at the beginning, because I had to fish them all back out.  Wish I had that 10 minutes back of my life.

Crock-Pot Minestrone (Whip It Up Wednesday!)

Ingredients
  • 1 Pound Hamburger
  • 16 Baby Carrots Cut into 1/4th’s or Smaller
  • 2 Ribs of Celery Sliced
  • 1 Large Onion Shredded
  • 1 Teaspoon Garlic (I use pre minced)
  • 2 Cans of Chicken Broth (4 cups)
  • 1 28-Ounce can Crushed Tomatoes with Liquid
  • Salt and Pepper to Taste
  • 1 Teaspoon of Mrs. Dash Table Blend
  • 1 Can of Garbanzo Beans
  • 1 Cup of Macaroni
  • Parmesan for serving
Instructions
  1. Brown ground beef..
  2. Drain fat.
  3. Saute onions for several minutes.
  4. In crock-pot combine all ingredients except garbanzo beans, macaroni and parmesan.
  5. Cover and cook on low for 6 hours.
  6. Thirty minutes before it’s done add garbanzo beans, recover.
  7. Fifteen minutes before it’s done add macaroni,, turn off crock-pot and unplug crock-pot, recover.
  8. Serve promptly at 6 hours.
  9. Can add parmesan on top.
Notes

Feel free to use Italian seasoning instead of Mrs. Dash, that was what I was planning on using, but I must have ran out!

    Hello Sarah! Your soup looks fantastic! I want to thank you for how you stated the tomatoes in the recipe. You included the juice in the instructions. I run across many, many recipes where things like that aren’t specified. It makes it difficult to try and guess what the author of the recipe means. I’ll be making this recipe for sure.
