Crock-Pot Chicken Brushetta Bake

I was rifling through my kitchen pantry when I spotted a couple of boxes of Stove Top stuffing and noticed there was a recipe on the back of the box for Brushetta Chicken Bake and as I was reading the recipe the wheels in my head started spinning and I thought to myself that I bet I could adapt this recipe to use my casserole crock pot. So I gathered the ingredients together (chicken, stuffing mix, canned tomatoes, garlic, mozzarella cheese) and then I snipped a some fresh basil from the potted basil I grow in my kitchen window.

The original recipe from Kraft calls for dried basil but I don’t think brushetta is right without fresh basil. It just brings that POP of freshness that dried herbs cannot. Even if you don’t grow fresh basil at home most grocery stores carry little containers of fresh herbs in the produce department or you can buy frozen herb cubes or even tubes of herbs you squeeze out.

But in a pinch dried basil will work too!

  • 14.5 Ounces Canned Italian Seasoned Diced Tomatoes Undrained
  • 6 Ounces Packaged Stuffing Mix Chicken Flavor
  • 1/2 Cup Water
  • 3 Cloves Garlic Minced
  • 1.5 Pounds Boneless Skinless Chicken Breasts Cut Into Bite Sized Pieces
  • 6 - 8 Whole Fresh Basil Leaves Minced
  • 1 Cup Shredded Mozzarella Cheese

Instructions
  1. Spray a 3.5 quart slow cooker with non-stick cooking spray if desired.
  2. Place bite sized pieces of chicken in the bottom of the slow cooker.
  3. In a medium bowl mix together the canned Italian style tomatoes, chicken stuffing mix, water and minced garlic until everything is moist.
  4. Spoon stuffing mixture over chicken evenly.
  5. Sprinkle fresh basil and mozzarella cheese over the top of the stuffing mixture.
  6. Cover and cook on LOW for 5 to 6 hours or on HIGH for 3 to 4 hours.
  7. Serve with a side salad and enjoy!

    Have you tried this with fresh mozzarella? Wondering how that would fare in the crock pot…

      I have not tried this wish fresh (as in homemade?) mozzarella cheese. I used a ball of mozzarella from the grocery store (Galibani brand) and shredded it by hand. I would imagine fresh mozzarella would be just lovely though!

    Do you mix in the stuffing seasoning packet as well?

      The brand of stuffing I used had the seasonings mixed with the dried bread cubes so there was not a separated seasoning packet. But if the brand you are using has a seasoning packet you should mix that in as well.

    Do the nutrition facts take into account the amount of carbs in the stuffing? I’m not sure if the entire meal (with stuffing) has only 3 Carbs. Perhaps without the stuffing, it is 3 Carbs.

      I think you are right Sarah…I think I need to spend a little time on this recipe tomorrow and recalculate the nutrition information. It looks like our software made a mistake (or I did) somewhere along the lines.

    I want to thank you for posting this recipe. I’ve searched a number of sites for Crockpot Chicken Bruschetta and found none that’s slightly similar to my oven-baked recipe, which is my favorite. Sites I found you had to cook the stuffing first or had to shred/cube the chicken first (not a fan of shredded.) I no longer have to search for a Crockpot version of my baked version as yours has the exact ingredients I use. I’ll post back after I make this but I know I’ll love it!
