Crock-Pot Bourbon Apple Pork Chops

We have had a lot of requests for some recipes using pork chops so I decided to get my creative juices flowing and come up with something tasty. I love the combination of apples and pork. they just seem to go together so well. And then I spied some bourbon on the liquor shelf in my pantry and had an “ah-ha” moment, that bourbon, apples and pork would be perfect. And it was.

If bourbon is not your thing, have no fear, just substitute apple juice for the bourbon and the dish will come out fantastic.

The house smelled amazing while this cooked and my husband raved about this dish for days afterwards.

Ingredients
  • 6 whole Pork Chops boneless, medium thickness
  • Salt & Pepper to season meat
  • 1 tablespoon Fresh Thyme
  • 4 whole Apples cored, cut in half, and thinly sliced
  • 1/3 cup Brown Sugar light, packed
  • 1/4 teaspoon Ground Cinnamon
  • 1/2 cup Bourbon
  • 1 tablespoon Cornstarch

Instructions
  1. Season pork chops with salt and pepper and fresh thyme.
  2. Place pork chops in the bottom of a 6 or 7 quart oval crock-pot.
  3. In a bowl combine the sliced apples, brown sugar, cinnamon and bourbon and stir well to combine.
  4. Pour apple mixture over pork chops in crock-pot.
  5. Cover and cook on high 4 hours or until pork chops are cooked and tender.
  6. Pour juices from the crock-pot into a small sauce pan and bring to a simmer on the stove top.
  7. In a small cup combine 1/4 cup water and 1 tablespoon cornstarch and add slurry to simmering juices, cook while stirring until thickened into a nice glaze/sauce.
  8. Serve glaze poured over apples & pork chops.
Recipe Notes

Be careful not to overcook the pork chops. They should be moist and tender. Overcooking them will make them tender but dry. You can substitute apple juice for the bourbon if you do not cook with alcohol. The flavor will be different but will still taste delicious.

    I’d like to try this one, but I’m worried about the bourbon because I have a little one and a husband whose job is strict on alcohol. Is there anything else I could use beside bourbon? Thank you!

      The alcohol in the bourbon does cook off. However I understand that some folks are hesitant to use it for various reasons. You could substitute some apple juice for the bourbon in the recipe. It will of course have a different flavor profile but should sill be rather tasty!

    I followed the recipe exactly. The only thing I changed was cooking it in the oven slowly at 250 for an hour. The flavors were all there. Awesome dish! I would definitely make it again. At first I was concerned that there wouldn’t
    be enough liquid to cook the pork, but it turned out to be the perfect amount. Thanks for sharing this.

    What kind of apples are best for this dish?

      Any kind of apple that holds up well for cooking should work. Granny Smith will add a nice tart and sweetness. Fuji are good. Golden Delicious…just about any good crisp baking apple should work. I would stay away from Red Delicious as those can get mealy when cooked.
