Slow Cooker Cheesy Potatoes
I was looking for something new and different for potatoes as a side dish. Normally, I am all about the simple baked fries or a simple baked potato, but I was hoping to “jazz” it up a little for my kids for dinner.
I can always get great ideas from my friend. She does a lot of cooking and and has some really good ideas. So, after a little consideration and thought she came up with the idea for some cheesy potatoes.
Cheesy Potatoes??? This was a brilliant idea!
With that thought, I remembered a recipe my sister gave me that was for her “Thanksgiving Cheesy Potatoes”. And the recipe was an easy one that you dump all the ingredients and cook.
I decided to use pre-cut potatoes but you can use whole potatoes that you dice yourself.
This recipe could not get any easier…just add all the ingredients to the slow cooker, give it a good stir and let it cook!

Products Needed:
- 3.5 Quart Casserole Slow Cooker OR a 4 Quart or 5 Quart Slow Cooker
- Can Opener
- Measuring Cups
- Cheese Grater
- Knife

Crock-Pot Cheesy Potatoes Recipe
Ingredients
- 28 Ounces Diced Potatoes (Can Use Frozen Or Refrigerated Diced Potatoes)
- 10.75 Ounces Canned Cream Of Chicken Soup (For Gluten Free Diets Look For A Brand That Is GF Free)
- 1 Cup Sour Cream
- 1 ½ Cups Shredded Cheddar Cheese
- ¼ Cup Finely Diced Yellow Onion
- 2 Tablespoons Butter (Melted)
Instructions
- Add all ingredients to a 4 or 5 quart oval or round slow cooker OR a 3.5 quart casserole slow cooker.
- Stir well to combine.
- Cover and cook on LOW for 4 to 5 hours.

Has anyone tried this with cauliflower rice – to make it also diabetic friendly (lo carb)??
Hi Kay-M, this recipe has not been tested using caulflower rice instead of potatoes. But I think it might work. I am just not sure how long it would need to cook without testing it out.

Confused – the printed recipe says to cook on LOW, but the video shows to cook it on HIGH – which is it?
Hi Kay-M, I am so sorry the video for this recipe says HIGH when it should say LOW. I will get with our video editor and see if she can get that fixed as soon as possible.
can this recipe cook on high setting ? If so how long?
Hi Sue, this recipe is best cooked on LOW per the instructions. Cooking on HIGH heat tends to burn the bottom of the Cheesy Potatoes.
I followed the recipe but my potatoes did not come out soft. What did I do wrong ?

About how many cups of diced fresh potatoes is 28 oz?
Hey Jeskimom, according to this online calculator I found 28 ounces of potato equals 5.7 ( ~ 5 2/3) US cups*
If it were me, I would just round up to 6 cups of potatoes.
