Crock-Pot Easy Haddock

Crock-Pot Easy Haddock

Seafood in the slow cooker is made easy with this delicious recipe for haddock. Fresh haddock fish fillets are simmered in a delicately seasoned tomato sauce with just a hint of oregano, lemon and red wine and comes out just fantastic and moist.

I like to serve the slow cooked haddock with a side of rice pilaf and some steamed vegetables or a nice side salad for a light and fresh dinner that everyone will love!

Instructions
  1. Place haddock fillets at bottom of crock-pot in a single layer if possible.
  2. Mix tomatoes, oregano, pepper, garlic powder and wine in a small bowl.
  3. Pour over fish.
  4. Cut lemon in half and remove seeds from one half. Reserve other half.
  5. Squeeze juice over the fish mixture.
  6. Cook on high for about 2 hours.
  7. Remove with a flat spatula or spoon, carefully.
  8. Fish is ready when it flakes easily.
  9. Slice lemon and serve on top of fish if desired.
Recipe Notes

You do not want to layer too much fish but if you need to cook a larger amount you may. Cooking times may need to be adjusted. I made this in a 6.5 quart crock-pot and the 4 fillets covered the bottom overlapping slightly. We had this over rice with the sauce spooned over it.
