Ingredients
- 4 whole Bell Peppers red or green, tops removed and cored
- 3/4 cup Rice uncooked
- 3/4 cup Bread Crumbs
- 1 whole Egg
- 1 whole Onion chopped
- 1 pound Ground Beef
- 1/4 cup Parmesan Cheese grated
- 14 ounces Canned Diced Tomatoes
- Salt And Pepper to taste

Instructions
- In a bowl, mix ground beef, onion, Parmesan cheese, egg, bread crumbs, rice and salt and pepper.
- Mix well with hand.
- Use meat mixture to stuff the green peppers well.
- Place stuffed green peppers in the bottom of a 5 quart or larger slow cooker.
- Add diced tomatoes to crock-pot around and on top of the green peppers.
- Cook on low for 8 hours.

Is the rice supposed to be cooked prior to stuffing the peppers? After 8-10 hours in the crockpot the rice was still hard.
No. I did not cook my rice first. Sorry I am not sure why your rice did not cook all the way through. 8 hours in a crock-pot should make the rice done.
I’ve tried this twice now and both times the center of still raw meat.
I am sorry this recipe did not work out for you Matt. You may need to cook it longer as each slow cooker cooks just a little bit differently.
