Ingredients
  • 4 whole Bell Peppers red or green, tops removed and cored
  • 3/4 cup Rice uncooked
  • 3/4 cup Bread Crumbs
  • 1 whole Egg
  • 1 whole Onion chopped
  • 1 pound Ground Beef
  • 1/4 cup Parmesan Cheese grated
  • 14 ounces Canned Diced Tomatoes
  • Salt And Pepper to taste

  • 3/4 cup Bread Crumbs

  • 1 whole Onion chopped
  • 1 pound Ground Beef
  • 1/4 cup Parmesan Cheese grated
  • 14 ounces Canned Diced Tomatoes
  • Salt And Pepper to taste

Instructions
  1. In a bowl, mix ground beef, onion, Parmesan cheese, egg, bread crumbs, rice and salt and pepper.
  2. Mix well with hand.
  3. Use meat mixture to stuff the green peppers well.
  4. Place stuffed green peppers in the bottom of a 5 quart or larger slow cooker.
  5. Add diced tomatoes to crock-pot around and on top of the green peppers.
  6. Cook on low for 8 hours.

    Is the rice supposed to be cooked prior to stuffing the peppers? After 8-10 hours in the crockpot the rice was still hard.

      No. I did not cook my rice first. Sorry I am not sure why your rice did not cook all the way through. 8 hours in a crock-pot should make the rice done.

    I’ve tried this twice now and both times the center of still raw meat.

      I am sorry this recipe did not work out for you Matt. You may need to cook it longer as each slow cooker cooks just a little bit differently.
