Slow Cooker Stuffed Green Peppers

Stuffed green bell peppers are SO easy to make in your slow cooker! All you have to do is mix up some extra-lean ground beef, uncooked white rice and a few choice seasonings and then pop them into your slow cooker topped with some canned diced tomatoes and allow them to cook for 8 hours.

While it cooks the meat cooks and so does the rice!

Learn how to make classic stuffed bell peppers in your slow cooker with this tasty recipe. Each bell pepper is stuffed with a tasty mixture of rice, ground beef that is seasoned just right and then cooked in a tomato sauce for perfect stuffed peppers!

Ingredients

  • 4 Medium Green Bell Peppers
  • 1 Pound Extra Lean Ground Beef
  • ¾ Cup Long-Grain White Rice (Uncooked)
  • ¾ Cup Bread Crumbs
  • ¼ Cup Grated Parmesan Cheese
  • 1 Medium Yellow Onion (Peeled And Diced)
  • 1 Teaspoon Garlic Salt
  • 1 Large Egg
  • 14 Ounces Canned Diced Tomatoes (Undrained)

Instructions

  • Prepare the green bell peppers by cutting off the tops of each pepper and removing the seeds. Set aside.
  • In a medium mixing bowl, combine together with your hands the ground beef, rice, bread crumbs, Parmesan cheese, onion, egg and garlic salt.
  • Divide the meat mixture into fourths and stuff each bell pepper with the meat.
  • Place the stuffed bell peppers in the bottom of a 5 quart or larger slow cooker.
  • Add the diced tomatoes (with the juice) around and on top of the bell peppers.
  • Cover and cook on LOW for 8 hours.
  • Serve and enjoy!

    Is the rice supposed to be cooked prior to stuffing the peppers? After 8-10 hours in the crockpot the rice was still hard.

      No. I did not cook my rice first. Sorry I am not sure why your rice did not cook all the way through. 8 hours in a crock-pot should make the rice done.

    I’ve tried this twice now and both times the center of still raw meat.

      I am sorry this recipe did not work out for you Matt. You may need to cook it longer as each slow cooker cooks just a little bit differently.
