Slow Cooker Pesto Chicken
This recipe for Crock-Pot Pesto Chicken was originally a reader recipe sent to us from Amy M.
We love it when readers send us their recipes, however they often do not contain photos of the finished product. So, slowly we are spending some time updating some of our reader recipes posted here on Crock-Pot Ladies so that we can provide a bit more information on how to cook them as well as take a photo of the finished dish so you can see what to expect.
Now somehow, I had never cooked with pesto before but thankfully found it was very easy to work with. I mean I guess how could you go wrong with something that is an Italian classic? I used store bought jarred pesto which you should be able to find in any major grocery store. But if you cannot find it or you just have an abundance of basil growing in your garden you could totally use homemade pesto too!
This recipe is very easy to put together and had a great flavor to it. I wasn’t sure if my children would go for it (I always get a little nervous when I’m cooking something unusual for their palates) but they absolutely loved it!
We will definitely be cooking with more pesto in the future!

Crock-Pot Pesto Chicken Recipe
Ingredients
- 21.5 ounces Cream Of Chicken Soup ((2 cans – 10.5 oz. each) look for gluten-free varieties if on on GF diet)
- ½ cup Pesto
- ½ cup Sour Cream
- 2 pounds Chicken ((Boneless skinless chicken breasts or tenderloin, cut into strips))
Instructions
- Spray a 5 to 6 quart crock-pot with non-stick cooking spray or line with a slow cooker liner if desired to make clean up easier.
- Place the strips of chicken at the bottom of the crock.
- Measure and combine the cream of chicken soup, pesto and sour cream in a bowl.
- Mix well.
- Spread mixture evenly over chicken strips in crock.
- Cover and cook on LOW for 5 to 6 hours or until chicken is cooked through and tender.
- Serve chicken over cooked noodles or pasta.

Hi, Looks tasty! Quick question….have you lined your pot with some sort of plastic liner?
It’s a Reynolds crock-pot liner. They are wonderful for clean up.
I’m all for convenience, but also for conservation. What happens to the crockpot liner after use? Don’t you miss out on scraping out the slow-cooked goodness with a spatula?
To each their own Tom, while we sometimes list using a slow cooker liner with some of our recipes it is always optional. Some folks like to make clean up easier, and some like to scrap the goodies out.
So I just tried this recipe and it seems a bit too salty for our taste , but we like how saucy it is. Any suggestions to make more sauce w/o using so much of the cream of chicken?
The Healthy Request versions of Cream of Chicken has only 17% daily allowance sodium vs the regular which is 38% daily allowance. I would try that. You could also try cutting back and only use a can and a half, and just eye ball it to make sure it’s not too dry/burning ect.
In the photo is that paprika sprinkled on top. I noticed it was red and I thought I would double check. Thank you my family love your recipes.
Yes, it’s my favorite herb to use to make a dish pop in color. You can add or omit, it’s not really necessary, but it’s pretty for the picture.
instead of cream of chicken, would using an Alfredo sauce be a replacement that still allows the dish to be moist and flavorful?
I know I love mixing pesto and alfedo sauce on regular pasta đŸ™‚
We have not tested this recipe using an Alfredo sauce Kristina, but I don’t see why it wouldn’t work.

A way to make this healthier would be to use organic cream of chicken (all organic ingredients are even better), foregoing the harmful MSG. Additionally, adding sautĂ©ed spinach takes it up a notch as well as using a bit less sour cream. When in doubt I’d add more pesto. Thanks for the recipe! đŸ™‚

can this be cooked on high for 3 to 4 hours and still get good results?

I’m not sure what you came up with for points on Pesto. I just started building this recipe and when I added the pesto it’s already up to 5 points without adding in the sour cream or any noodles. Might want to recalculate.
In Weight Watchers recipe builder it we used 1/2 cup(s) reduced-fat pesto sauce.

Hi Shannon, this recipe makes 8 servings. So one serving would be 1/8th of the finished recipe.
This sounds delicious! Could I thin this a bit with chicken broth to make it a soup? I’m thinking about eliminating the pasta also.

Can i use Knorr packets of pesto instead of the jar kind??
Great question Jaime, while I have never used the Knorr pesto packets I think it would work okay if you make the pesto according to the directions on the packet before you add it to the slow cooker.
