So the first time I made this, I was so excited, I was using nearly all fresh ingredients and it smelled so good while it was cooking. It tasted absolutely marvelous but was absolutely mush. Yummy mush, but still, I couldn’t include mush in my newest top 10 freezer meals.
So back to the drawing board to find a way to remove more of the fluid and bulk up the meatloaf. So sadly, I had to swap out the fresh onions for dehydrated, scratched out the celery and used oatmeal instead of bread crumbs and it worked!
This recipe will need to be done in a large 6 quart or larger oval crock. You will need to make sure you have a loaf pan that will fit in it (otherwise this won’t work). My newest Crock-Pot will hold a Pyrex glass loaf pan, which works out perfectly. The trickiest part is figuring out how to get it back out of the crock. But it’s an easy cleanup, and the best part with using the crock for meatloaf, is it doesn’t get dried out at all. The meatloaf comes out nice and moist. I would serve this with mashed potatoes, rice or some egg noodles.
