Scrub each potato and cut each one in half and again across without cutting all the way through the skin. Place each potato on a sheet of aluminum foil.
To each potato add cooked and shredded chicken, 1 teaspoon of butter, salt, pepper, onions, and 3 baby carrots. Squish the potato back together and add some barbecue sauce to the top. Wrap the potato in the foil, wrapping it upwards so that none of the BBQ sauce will leak out of the sides.
Place each foil wrapped potato barbecue sauce side up and place in your slow cooker. Cover and cook on LOW for 8 hours. Carefully remove cooked potatoes from slow cooker with tongs. Eat from the foil packet if desired.
