Trim any excess fat from the pork butt (or shoulder) roast and place in the bottom of a 6 quart or larger slow cooker.
In a medium mixing bowl, whisk together the pineapple juice, 1 cup of the barbecue sauce, minced onion and garlic.
Pour sauce mixture evenly over the top of the pork roast.
Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours.
Remove roast from slow cooker and place in a large bowl or baking dish and shred the meat with two forks, removing and discarding any large fatty bits if necessary.
Drain off the cooking liquid in the slow cooker and discard.
Add shredded pork back into the slow cooker and add the remaining 1 cup of barbecue sauce. Toss to coat the pulled pork into the sauce.
Recover slow cooker and allow to cook on LOW for 30 minutes to allow the pork to heat back up in the sauce.
Serve pulled pork on your favorite buns or rolls or use in other dishes as needed.
