This delicious and kid-friendly taco casserole features a great ground beef taco filling topped with cheddar cheese and then a layer of tater tots. Everything is then cooked in the slow cooker until the tater tots are cooked through. To take this recipe to the next level, top each serving with a dollop of sour cream, additional shredded cheese and sliced green onion if you want.

In a large skillet on the stove-top, brown and crumble the ground beef with the taco seasoning until the meat is fully cooked. Drain off any excess fat.
Add the salsa and tomato sauce to the ground beef mixture and stir to combine.
Pour meat mixture into a 3.5 quart casserole slow cooker OR a 6 quart or larger oval slow cooker and spread evenly.
Sprinkle the shredded cheese on top of the meat mixture.
Arrange the tater tots in a single layer over the top of the cheese.
Cover and cook on HIGH for 4 to 5 hours or until the tater-tots are cooked through.
Serve with additional toppings if desired and ENJOY!
