Place chicken in the bottom of a 6 quart or larger slow cooker and season with the cumin, onion powder and garlic powder.
Layer peppers, onion and mushrooms on top of the chicken.
Dot the top of the vegetables with small pats of the butter.
Cover and cook on LOW for 4 to 6 hours or until the chicken is fully cooked and is easily shredded.
Shred chicken right in the slow cooker with two forks.
Top the chicken with slices of pepper jack cheese.
Recover slow cooker and cook on HIGH for 10 to 15 minutes to allow the cheese to melt.
Serve and enjoy!

*Bell Pepper Note - You can use any color of or combination of colors of bell peppers. I used one each green bell pepper, orange bell pepper and red bell pepper.
