Crock-Pot Strawberry Soup

Another great theme this month for the Improv Challenge hosted by Kristen at Frugal Antics of a Harried Homemaker.  This month our challenge was to take strawberries and cream (really anything with the word cream in it was acceptable) and make a delicious dish to share with all the challengers and all of you! I was having a hard time coming up with something that would work in a slow cooker and didn’t want to do a strawberry crisp or similar since we’ve had a few recipes like that on our blog.  So I found a recipe for Strawberry Soup and figured why not give it a try in the crock-pot.  This recipe only has 5 ingredients so you have to love that! Ingredients
  • 4 cups Fresh Strawberries washed and roughly chopped
  • 1 cup Granulated Sugar
  • 1 cup Burgundy Wine or other dry red wine
  • 4 cups Water
  • 1 cup Sour Cream

Prep Time 15minutes
Cook Time 4hours on LOW
Instructions
  1. Pulse strawberries in food processor until smooth.
  2. Put all ingredients except for sour cream in 5 quart or larger slow cooker and stir well.
  3. Cook on low for 3 hours.
  4. Add sour cream, stir and cook for one more hour.
  5. When ready to serve, put soup in food processor or blender to process sour cream for a minute or two.
  6. Add one or two cups at a time max.
  7. Serve warm or chilled.
Recipe Notes

If you don't like wine or don't use alcohol in your recipes, I have read blogs that made a similar recipe on the stove-top without alcohol. This is pretty sweet, so if you'd like I think your safe cutting back on the sugar to 1/2 cup. Sour cream is not a big fan of the crock-pot so adding it in to the food processor or blender at the end helps get rid of any "clumps". There will be some texture to this soup because of the strawberry seeds. You can also add more pieces of strawberry at the end if you like it a little chunky. I liked this both warm and chilled. Chilled it almost takes like a smoothie but richer.
