Crock-Pot Spinach Casserole
Frozen spinach is transformed into a creamy and cheesy casserole that is the perfect side dish for any meal. There are only 6 ingredients in this vegetarian casserole side dish making it a snap to make. The cottage cheese and Velveeta make it just the right amount of cheesy. While the flour and egg let the casserole set up so that you can slice it and serve it!
Feel free to add in other great vegetables too to go along with the spinach. I have used onions, mushrooms and red bell pepper and it turned out fantastic!
If you have any leftovers they heat up nicely in the microwave and are great for breakfast or lunch the next day!

- 26 ounces Frozen Spinach thawed and squeezed dry
- 16 ounces Cottage Cheese
- 3 whole Eggs
- 1/4 cup Butter
- 1/4 cup All-Purpose Flour
- 1/2 teaspoon Salt
- 1 1/2 cups American Processed Cheese such as Velveeta, cubed

- Add ingredients to the crock-pot.
- Mix well inside the crock-pot.
- Cook on low for 1 hour then stir well again to help spread the melting cheese.
- Cook on low for an additional 4 hours until the sides are starting to get brown and the casserole has formed.
- Serve.
