Crock-Pot Mexican Pork Stew Recipe
Everyone in the family will love this lovely pork stew recipe that is slow cooked to perfection. Cubes of pork and sweet potatoes are cooked in a not too spicy stew that includes green chilies and tomatoes. Top with fresh cilantro juice to make the flavors really pop!

Instructions
  1. Add pork cubes, chicken broth, green chilies, tomatoes, onion, cumin, salt and pepper to a 5 quart or larger slow cooker.
  2. Cover and cook on LOW for 3 hours.
  3. Remove lid and add cubed sweet potato.
  4. Recover slow cooker and continue cooking on LOW for 3 to 4 hours or until pork and sweet potatoes are cooked through and tender.
  5. Stir freshly squeezed lime juice into stew and ladle into bowls.
  6. Top each bowl with fresh chopped cilantro before serving.
  7. Enjoy!
