  1. Prepare a Pyrex loaf pan that will fit inside your slow cooker by spraying it with non-stick cooking spray.
  2. In a large mixing bowl add all ingredients except the cheddar cheese and the ketchup. Carefully mix the ingredients with your hands being careful not to over mix.
  3. Add the cheddar cheese and carefully mix in.
  4. Scoop the meatloaf mixture into the loaf pan making a nice loaf.
  5. Using aluminum foil… cut long sheets of the foil, fold in half long wise and then crisscross them in the crock so when you place the loaf pan in you’ll be able to pull the foil carefully at the ends as a handle to transfer the loaf pan out of the crock.
  6. Place the loaf pan in, and carefully roll the top of the foil over so it won’t be in the way of the meatloaf. Cover and cook on LOW for about 8 hours or 4 to 6 hours on HIGH. You will need to use a thermometer once it appears done to make sure it reaches 160° F.
  7. If you want to use cheese as a garnishment you’ll want to place that once you’ve reached 160 degrees and let it melt for 10-15 minutes. You then use oven mitts and carefully use the foil “handles” to pull the loaf pan out and set it somewhere safe on your counter or stove when you’re ready to remove. Slice the meatloaf and serve.
