Crock-Pot Express Tuscan Soup Recipe
This lovely soup is inspired by the Italian Tuscany hillsides. Featuring Italian sausage, sun dried tomatoes, onion, garlic and spinach all floating in a warm and flavorful broth that has been enriched with a little cream. This lovely soup will warm you up from the inside out.

Ingredients
Instructions
  1. Set Crock-Pot Express Multi-Cooker on SAUTE and press START.
  2. Add olive oil to the insert and allow the oil to get hot.
  3. Add the ground sausage and cook and crumble until browned.
  4. Add the diced onion and cook for 2 to 3 minutes.
  5. Add the minced garlic and cook for 1 minute more.
  6. Add the vegetable broth, sun dried tomatoes, oregano, salt and pepper and stir to combine.
  7. Press STOP to turn off the sauté function.
  8. Close and lock the lid, making sure the valve is set to sealing.
  9. Set on MANUAL, HIGH PRESSURE for 5 minutes. Press START.
  10. Allow the pressure cooker to come up to pressure and start cooking for the set amount of time.
  11. When the time is up, carefully turn the valve to venting to do a quick release of pressure. Making sure to stay clear of the hot steam.
  12. Carefully remove the lid and set aside.
  13. Add in the heavy whipping cream and baby spinach. Stir until the spinach is wilted.
  14. Serve topped with a pinch or two of shredded parmesan cheese if desired and enjoy!
