Instructions
  1. Peel and dice sweet potatoes and add to a 5 quart or larger slow cooker.
  2. In a bowl mix together the pecans, coconut, melted butter, both sugars, vanilla extract and salt.
  3. Add pecan mixture to the slow cooker and toss with the sweet potatoes.
  4. Cover and cook on LOW for 4 to 5 hours.
