Slow Cooker Baked Potato Tin Foil Dinner
This was our Sunday dinner for my family. I actually doubled the recipe and brought out 2 of my larger slow cookers so that I would have enough (plus leftovers for lunch for my husband and I) to feed our big family.
I had seen various similar recipes around but they were all for the oven. Of course, in my kitchen we try to use the oven as little as possible (especially in the summer) so I figured we must find a way to do a potato tin foil dinner in the slow cooker.
It’s rather easy to do normal baked potatoes in your slow cooker, but I wanted to have the yummiest, most sensational dinner we could (too bad I had to cook it!).
I made Russet potatoes, with bacon, onion, celery, cheese and other good stuff and wrapped it all in foil packets which baked up great in the slow cooker.
To eat you just unwrap and dig in with a fork. Maybe add a side salad or something for a side dish. But really you have a whole meal in on tin foil packet!
By the way, pretty sure this was the best smelling recipe I have ever made! We were drooling by the time it was done.

Can I Use Other Vegetables Or Ingredients To Change These Up?
This recipe is easily adaptable to suit your liking. If you are not a fan of onions or celery, omit them. If you want to make these vegetarian, you can leave out the bacon. You can also add in other tasty ingredients like cooked chicken or steak, pulled pork, broccoli, cauliflower, zucchini, ranch dressing, garlic, etc. Use your imagination and this recipe as a base and just go for it!
Can I Use Sweet Potatoes Instead Of Russet Potatoes?
If you want to use sweet potatoes instead of Russet potatoes you certainly can. If you check out the comments below you will see some great suggestions on a totally different recipe really by using sweet potatoes, butter, marshmallows, pecans and other goodies. Like I said, use this as a base recipe!

- 8 Sliced Thick Sliced Center Cut Bacon Diced Or Left In Whole Strips
- 8 Medium Russet Potatoes Washed
- 8 Tablesoons Bottled Barbecue Sauce Your Favorite Brand
- 4 Tablespoons Unsalted Butter Cut Into 16 Pats Of Butter
- 1 Medium Yellow Onion Peeled And Finely Diced
- 2 Ribs Celery Thinly Sliced
- 24 Whole Baby Carrots
- 3 Whole Green Onions Thinly Sliced
- 1 Cup Shredded Cheddar Cheese shredded

- In a medium skillet on the stove-top, cook the bacon until crispy. Drain on a plate lined with paper towels and set aside for later.
- Tear off 8 generous sheets of aluminum foil to wrap your stuffed potatoes in.
- Spray each sheet of foil with non-stick cooking spray if desired to prevent sticking.
- Cut each potato into thirds, without cutting all the way through the potato.
- Place 1 tablespoon of barbecue sauce on each sheet of foil and then place each potato on top of the barbecue sauce with the cut sides facing up.
- Place a pat of butter into each slit in each potato.
- Top each potato with diced onion and celery.
- Arrange baby carrots around the sides of the potatoes and cup the foil up around them.
- Add some cooked bacon and green onion to the top of each potato.
- Bring the foil up around each potato and wrap the potato and it's filling to cover and create a foil packet.
- Place foil packets into a 6 quart or larger slow cooker (it's okay if they are stacked on one another.
- Cover and cook on LOW for 8 hours or until the potato is tender when pierced with a fork.
- Carefully remove each foil packet from the slow cooker and open the foil just enough to add some shredded cheese to each potato.
- Re-wrap and place the foil packets back into the slow cooker. Recover and cook for 20 minutes on LOW to allow the cheese to melt.
- Serve the foil packets placed on a plate, slightly unwrapped so you can eat right from the foil.
- Enjoy!
Feel free to play with this recipe by omitting ingredients you don't like or adding ingredients you do. I have made these potatoes with broccoli florets, garlic, and leaving out the celery and they were yummy!

Never thought of using sweet potatoes! Sweet potatoes and potatoes cook about the same. I would follow the recipe using the sweet potatoes instead.
I think I will substitute dried cranberries, pears, pecans or almonds with some ginger and brown sugar for the veggies and BBQ sauce and see what happens.

Use butter and brown sugar in place of other ingredients and when pulling them out top with miniature marshmallows
That sounds delicious! You could also add a bit of orange juice, lots of butter and instead of cheese for the last 20 minutes, do marshmallows instead. YUMMO!
