Slow Cooker Baked Potato Tin Foil Dinner
This was our Sunday dinner for my family. I actually doubled the recipe and brought out 2 of my larger slow cookers so that I would have enough (plus leftovers for lunch for my husband and I) to feed our big family.
I had seen various similar recipes around but they were all for the oven. Of course, in my kitchen we try to use the oven as little as possible (especially in the summer) so I figured we must find a way to do a potato tin foil dinner in the slow cooker.
It’s rather easy to do normal baked potatoes in your slow cooker, but I wanted to have the yummiest, most sensational dinner we could (too bad I had to cook it!).
I made Russet potatoes, with bacon, onion, celery, cheese and other good stuff and wrapped it all in foil packets which baked up great in the slow cooker.
To eat you just unwrap and dig in with a fork. Maybe add a side salad or something for a side dish. But really you have a whole meal in on tin foil packet!
By the way, pretty sure this was the best smelling recipe I have ever made! We were drooling by the time it was done.

Can I Use Other Vegetables Or Ingredients To Change These Up?
This recipe is easily adaptable to suit your liking. If you are not a fan of onions or celery, omit them. If you want to make these vegetarian, you can leave out the bacon. You can also add in other tasty ingredients like cooked chicken or steak, pulled pork, broccoli, cauliflower, zucchini, ranch dressing, garlic, etc. Use your imagination and this recipe as a base and just go for it!
Can I Use Sweet Potatoes Instead Of Russet Potatoes?
If you want to use sweet potatoes instead of Russet potatoes you certainly can. Like I said, use this as a base recipe!
