Crock-Pot Meatloaf Stuffed Onions
Crock-Pot Meatloaf Stuffed Onions was a fun recipe where I wanted to put two idea’s together in one meal. The first was to make mini meatloaves and the other to place those meatloaves in a hollowed out onion to add more flavor. As my family is needing to adhere to some dietary changes we needed this recipe to be lower carb, so we actually used crushed pork rinds as the “bread crumbs” for meatloaf.
Yes that is right, pork rinds! They are low carb and gluten-free.
If this sounds intriguing to you there are various flavors from bland to spicy to peppered. If neither of those is something you need to be concerned with feel free to use regular bread crumbs or oatmeal.
This recipe will leave you with some excess onions that are not cooked. I just placed the pieces I didn’t use in a large Ziploc bag so I could add them to our other meals during the week. I’m very big on not wasting food.
With the onions you are taking out the core, leaving the first two “layers” intact as you will place the meatloaf in the onion after making it into a ball. If you are careful you can make several of your outer layers out of the same onion, thus getting more then one “loaf” out of the onion. I used yellow onions but it would be fine to use any kind that you want. When I do it again I may try various different kinds just for the color variety.
The onions leave a great flavor and this is a recipe I am sure to make again and again.
