Crock-Pot Chicken n’ Potato Foil Dinner
Crock-Pot Chicken n’ Potato Foil Dinner is a spin off of an earlier foil dinner I made. I simply changed up the ingredients a bit. I had fresh ingredients from Bountiful Baskets that needed to use up and I also had some pre-cooked chicken from a previous dinner (but you can also use a rotisserie chicken from the grocery store) and voilà…a new foil dinner was created!
If you have never made foil dinners before, let me tell you they are the most amazing smelling dinners I think I have ever made. And the foil packets are kind of fun for the kids (adults too…but the kids really seem to like them).
The only thing I would do a little differently next time is that I would use bigger russet or Idaho potatoes instead of the smaller red potatoes I got from Bountiful Baskets. A bigger potato would be easier to stuff.
Remember: don’t get to trapped by following this recipe to a “T” this is one of those easily adaptable recipes…if you don’t have carrots on hand but have celery… use that instead. If you don’t have cooked chicken but you have cooked turkey go for it. Play with the spices and seasonings to make it your own. Got some cooked bacon…add it…it will be amazing!
