Crock-Pot Mushroom Chicken in Tomato Recipe

  1. Line a 6 quart or larger slow cooker with a slow cooker liner for easy clean up (optional)
  2. Place the chicken in the slow cooker and season with a little salt and pepper to your liking.
  3. Add the chopped onion.
  4. Add the sliced mushrooms.
  5. Cover with the tomato soup. Cook on LOW for 6 to 7 hours or on HIGH for 4 hours.
  6. Check the chicken with a meat thermometer to make sure it has reached 165°F (74°C).
  7. Pull out the chicken and place in a bowl and carefully shred into large chunks so it’s more bite sized.
  8. Add the broccoli and yellow squash in the crock.
  9. Add back the shredded chicken to the crock and mix well. Cook on LOW for 1 additional hour.
