  1. On the stove top in a medium frying pan cook the bacon, drain and set aside.
  2. Wash and slice potatoes.
  3. Line a 4 – 4.5 quart slow cooker with aluminum foil allowing enough extra to fold over before cooking.
  4. Spray the inside of the foil with non-stick cooking spray.
  5. Layer the ingredients: potatoes, onion, bacon, dry ranch dressing and cheese in at least 2 layers.
  6. Once all ingredients are in crock-pot, fold foil over the top of the potatoes.
  7. Cook on LOW for 4 – 6 hours.
  8. Garnish with sliced green onion and remaining 1/2 cup shredded cheese.
Recipe Notes

Don’t forget to use cooking spray oil on the foil.  I made this mistake and some of my potatoes and cheese stuck to the foil.
