Reader Janice Hunter has sent us this great recipe for her Easy Vegetable Beef Chili done up in the crock-pot. Sounds pretty tasty!

Ingredients
1.5 Lbs. Ground Beef (Or Turkey)
1 (16 Oz.) Bag Frozen Mixed Vegetables
1 (14.5 Oz.) Can Petite Chopped Tomatoes
1 (15.5 Oz.) Can White Beans (Rinsed And Drained)
1 (16 Oz.) Jar Of Your Your Favorite Salsa
3 Cups Cooked Noodles, Elbow Macaroni Or Rice
Sour Cream For Garnish (Optional)
Instructions
- Brown meat, drain fat and place meat into crock pot.
- Add vegetables, beans, tomatoes and salsa.
- Stir cook on low 6-8 hours, high 2-4 hours.
- Serve over noodles or rice.
- Garnish with sour cream.
- Enjoy!

Hi Heidi here, I am a über (one of my favorite words by the way) busy work at home mom. I am married to my high-school sweetheart and together we are raising 5 lovely children in the "Cowboy State" Wyoming.
