5 Large Sweet Potatoes (Your store may call them Yams as well)
1 Tablespoon Butter, Softened
¼th Cup Butter, Melted
1 Teaspoon Ground Cinnamon
½ Teaspoon Salt
1 Teaspoon Ground Nutmeg
¾th Cup Brown Sugar
½ Cup of Orange Juice
3 Cups of Mini Marshmallows
Scrub and peel the yams.
Cut into smaller pieces and boil for about 20 minutes if you like your sweet potatoes very mushy.
If you like them chunky, boil for less time.
Be sure to add a little bit of salt to the water.
Mix all ingredients except marshmallows & boiling sweet potatoes.
After you have boiled them, mash them a bit, adding your ingredients in except marshmallows.
If you want chunky Sweet Potatoes do not over mix.
We cooked on low for 3 and a half hours, 20 minutes before put in the marshmallows on top.
That 3 and a half hours is not a hard set rule, you have already boiled them so within a couple hours they should be good to go.
