I had a bunch of Spinach in my garden that I needed to use up before it bolted. So I asked around for some idea’s of things to make with it, and Quiche was one of the idea’s and this is what we came up with it. Everyone ate it, including my sister who doesn’t like cooked spinach. She says ketchup fixes everything.
Ingredients
10 Eggs, Beaten
1 Cup Milk
2 Cups of Grated Cheddar Cheese
1/2 Tablespoon of Pepper
1/2 Tablespoon of Salt
6 Small Sausage Links cut up (I Used the Microwave Kind)
1/2 Cup Shredded onion
1 1/2 Cups Fresh Spinach finely cut up (be sure to clean well, and then dry, and then cut).
Liner
Pam
Instructions
- First beat the eggs.
- Add milk, cheese, salt and pepper (add the salt and pepper to more your taste).
- Add spinach and onion, and the sausage.
- Place Liner in crock.
- Spray with Pam.
- Pour egg mixture into crock.
- Cover and cook for 4 hours on low.

I made this quiche recently, and it was a huge hit with my husband! He said he’d rather eat this than anything we might get at a restaurant. My 14 month old daughter also liked it.
When I make it again, I will probably use less salt and pepper- for my taste. Overall, this recipe was easy and delicious, and it will become a family staple in our house.
