Crock-Pot Turkey Spinach Meatloaf with Roasted Red Pepper Sauce
My husband is not known for his love of ground turkey. He always complains that it is too dry or does not have enough flavor. But when I decided to try a new recipe with ground turkey out I wanted to make sure the final meatloaf was full of great flavor, was still nice and moist AND was still healthy.
I combined some frozen chopped spinach to up the health quotient and seasoned the meatloaf with bottled light Italian salad dressing which brings both great flavor but also moisture!
Most meatloaf recipes are topped with ketchup, either plain or seasoned up with brown sugar and maybe some other seasonings. But I decided to use a jar of roasted red peppers and turn that into a great low calorie sauce that adds a nice punch of flavor. It was my husband’s favorite part!
