Crock-Pot “Swamp Stew”

This fun recipe for Crock-Pot “Swamp Stew”  was developed with Halloween in mind But don’t let the name fool you, this is actually a very tasty dish of cheesy spinach. It can be served as either a side dish, or as a dip.

It’s not even really a stew!

But I could really imagine a swamp creature rising from the depths of this warm dish!

Like I said, it makes a great side dish. but it really does stand out as a dip. Perhaps with some pretzel rods, crackers or even just some crudite (cut up veggies). If you really wanted to go with the Halloween theme, you could serve this in a hollowed out small pumpkin (lined with a plastic container) or one of those black plastic cauldrons that you can find this time of year.

Crock-Pot “Swamp Stew”

Perfect for Halloween, this “Swamp Stew” is a spinach casserole with cheese that makes a great addition to your ghoulish menu. Creamy and delicious plus it is packed with iron!

Ingredients

2 (10 Oz.) Bags of frozen chopped spinach, thawed & drained
2 Cups lowfat cottage cheese
1/4 Cup butter, cut into pieces
1/2 Pound American cheese, cubed
3 Eggs, beaten
1/4 Cup all-purpose flour
1 Teaspoon salt (optional)

Instructions

  1. Mix all ingredients in a mixing bowl.
  2. Grease a 6 quart crock-pot or use liner.
  3. Add spinach mix to crock-pot.
  4. Cover and cook on LOW for 4 to 5 hours or on HIGH 2 – 3 hours.
