This is a great recipe when you need to make a ton of baked potatoes. So a big party, or activity or even something like a funeral. I decided to do it, because I had a big bag of potatoes that I really needed to use up. I use BBQ sauce to add the moisture so they soften up, but they don’t retain the BBQ sauce flavor.
Big pot of baked potatoes with onions and carrots. You use butter and garlic salt to help season the potatoes. I then use BBQ sauce to add the moisture. Potatoes will not really absorb BBQ flavor, but they seem to cook better with the added moisture.
3 Lbs. Potatoes Scrubbed, Not Peeled (I used Idaho)
1 (16 Oz.) Bottle BBQ Sauce
3 Yellow Onions Quartered
1 1/2 Cups of Baby Carrots (choose larger size if possible)
Stick of Butter
Lawry’s Garlic Salt
Spray inside with Pam or similar.
Pour small amount of BBQ sauce at bottom of Crock-Pot.
Choose largest potatoes and rub with butter first (rub well especially potatoes that will be on side of crock-pot, so they don’t burn).
Put first layer down potatoes into crock-pot.
Fill in gaps with quartered onions and carrots.
Pour thin layer of garlic salt.
Squirt over lightly with BBQ sauce.
Start with next layer.
If you have any larger potatoes still butter them and lay them on this layer.
Continue with putting butter on potatoes and making a layer.
When you have finished fill in gaps with onions and carrots.
Sprinkle with garlic salt.
Squirt with BBQ sauce.
With your remaining potatoes cover them in butter and fill in any large gaps you have left.
All small gaps fill in with your remaining onions and carrots.
Add your last layer of garlic salt.
Squirt last layer of BBQ sauce.
Cut up remaining butter in small chunks and put in spots on edges of crock-pot.
